Looking for a simple breakfast for the kids (or yourself)? These simple fluffy pancakes are sugar-free but still super-yum and can be topped with your favourite breakfast toppings (It’s usually bananas, strawberries and yogurt or limes in my house.)
Simple Fluffy Sugar Free Pancakes
- 1 cup self-raising flour (or 1 cup all-purpose flour plus 1 ½ teaspoons baking powder)
- 1 cup buttermilk
- 1 egg
- 1 tablespoon of oil or butter
- Mix all ingredients (but don’t over mix)
- Cook pancakes how you usually cook pancakes!
You can also get crazy with these and add dinner toppings! We often substitute these fluffy morsels for taco shells and have Mexican pancakes for dinner!
